Qu'est ce qu'un Spécialiste Application chez Puratos ?
Référent de notre expertise technique en boulangerie
Expert des méthodes de production artisanales et industrielles des applications de boulangerie (pains, buns, pains de mie, brioche, produits laminés)
Rattaché à la R&D MANAGER BAKERY, le Spécialiste Application collabore avec un binôme R&D pour développer des solutions innovantes adaptées à la clientèle. Il participe activement au développement de produits et leur industrialisation en clientèle par sa connaissance et sa compréhension des recettes et process boulangers.
Déplacements : sur la France, ponctuellement à l'étranger
Missions :
Contribue au développement de nouveaux ingrédients pour la boulangerie :
Organise et planifie des essais de panification en collaboration avec le responsable R&D pour tester l'impact d'ingrédients prototypes
Réalise les essais de panification en laboratoire
Réalise les analyses de qualification produit (dimension, volume, texture…)
Planifie, prépare et contribue aux évaluations sensorielles
Rédige les rapports d'essais
Partage les conclusions avec le responsable R&D
Est force de proposition concernant les axes d'amélioration des prototypes ou protocole d'essais
Participe aux points d'avancement (en collaboration avec le responsable R&D) projets avec les clients pour apporter son expertise technique
Organise et planifie l'expédition en clientèle de maquettes réalisées en laboratoire
Participe à l'industrialisation de nos ingrédients en clientèle :
Suit les essais industriels chez nos clients
Est force de proposition dans l'ajustement de la recette et/ou du procédé de fabrication
Rédige un rapport d'industrialisation et partage les conclusions avec le responsable R&D
Réalise un audit sur ligne pour identifier les axes d'amélioration ou les causes d'échec d'une production industrielle
Être (devenir ?) le référent industriel par la connaissance et la veille des équipements industriels (suivi des évolutions technologiques, échanges avec fournisseurs…)
Donne support à la force de vente pour la promotion de nos produits :
Participe à la formation de nos collaborateurs par l'organisation d'ateliers et de présentation
Anime des ateliers de formation ou de co-création en collaboration avec le responsable R&D pour nos clients
Développe et produit des kits produits pour présenter l'impact de nos ingrédients
Participe à l'entretien du laboratoire de panification :
Gère le stock de matières premières et de produits fini
Entretien le matériel et l'espace de travail
Profil recherché :
Rigueur/Autonomie
Capacité à travailler en équipe
Vous êtes passionné par le monde de la boulangerie
Vous aimez comprendre et étudier l'impact des ingrédients et du procédé de fabrication sur les produits finis
Vous avez la volonté de travailler sur des procédés de fabrication pour l'artisanat et pour l'industrie
Vous justifiez d'une première expérience en production artisanale ou industrielle de boulangerie de minimum 5 ans
Idéalement, vous justifier d'une première expérience dans un service R&D OU en meunerie OU chez un industriel/semi-industrie/bakery chain de la boulangerie/pâtisserie OU chez un fournisseur d’équipements.
Vous maitrisez le pack office (word, excel, outlook)
Vous justifiez d’un niveau intermédiaire en anglais
