**Context**
- The Institut Paul Bocuse provides education for Culinary Arts, Food and the Hospitality industry. Its _
- Research Centre aims to contribute to the well-being of populations through Science and Innovation. _
- Projects cover various topics related to culinary preparation, meal experience and food consumption, _
- in all contexts (e.g. school canteens, workplace restaurants, street food outlets, nursing homes), _
- worldwide. The experimental facilities include a Living Lab (labelled ENOL), with domestic and _
- professional kitchens, a modular restaurant and a multi-sensory immersive hall where products are _
- tested in real life with a diversity of measures: choice, intake, liking etc. _

**Missions**

(SCALE) and other projects):

- Conduct experiments: participant recruitment / product testing - consumer test with the help of

the innovation team (culinary, user experience)
- Collaboration with chefs : development of recipes
- Collect and record data from experiments and analyse collected data
- Write up the reports and results and disseminate (article, conference, poster)
- Represent the Research Center during meetings and be responsible for reporting updates on the

project’s advancements to the consortium members - Liaise with other project partners when
needed - Undertake the technical reporting of the project in coordination with other team
members according to needs
**Main project description**

Compounds from micro
- Algae to foster a bLue future”. This project aims to promote the use of

microalgae in different types of industries (food, food supplement, feed, and cosmetic industries). In

variety of fields, including nutrition and well-being. Indeed, this under-exploited resource requires no

or little land to grow, presents a rich diversity featuring thousands of unique bioactive compounds

(proteins, pigments, polysaccharides, vitamins, polyunsaturated fatty acids (PUFAs), etc.) and they

absorb CO2. But to date no large-scale industrial production enabling access to the exceptional

biodiversity of microalgae has been reached.

The Institut Paul Bocuse Research Center will be involved in the work package focused on the food
- Create culinary recipes with microalgae (with the help of culinary team)
- Guarantee the consumer’s appreciation of the created microalgae based recipes

**Relevant experience**
- Food engineer degree / Master’s degree/ PhD in food science
- Good organizational and time management skills (ability to complete projects on time)
- Ability to work within a dynamic, friendly multi-disciplinary team at the crossroads between

research and applied studies at ecological settings
- Excellent communication and writing skills
- Experience is running experiments involving human volunteers and consumer tests
- Command of English and French is essential and German and/or Spanish is highly desirable

**Conditions**:

- CDD 12-months is available in April 2023 with the Institut Paul Bocuse Research Center. Possible

extension of the contract or permanent contract depending on the progress of the project and the
funding obtained.
- Two years of experience minimum required
- Salary: 28-40k€ gross per year depending on experience
- Mandatory company social insurance. Meal provided on the days of presence on site. 50% of

public transport costs covered
- Primary Location: Lyon (Ecully) - possibility of one home-office day per week
