The RTB Breeding for Quality initiative is a segment of the extensive RTB breeding project, focusing on the integration of processing and culinary quality of boiled sweetpotato into standard breeding practices. This initiative aims to build upon the advancements made by the RTBfoods project. Key outputs include the development of Standard Operating Procedures (SOPs) for quantitative descriptive analysis (QDA), instrumental texture assessment, and preliminary consumer acceptability/rejection benchmarks. The goal is to implement these methodologies in routine breeding to highlight their impact on breeding selections.
II. Goals
To identify sweetpotato genotypes exhibiting exceptional quality characteristics from breeding populations utilizing SOPs established in the RTBfoods project (routine quality assessment of sweetpotato harvests).To assess acceptability/rejection thresholds for selected key quality traits of boiled sweetpotato in Uganda.III. Expected Outcomes
Create a consumer testing questionnaire and present it to an interdisciplinary team for feedback – deliverable: finalized questionnaire.Revise the trained sensory panel – deliverable: comprehensive activity report.Educate enumerators responsible for conducting consumer tests – deliverable: workshop report.Plan and execute consumer tests and participatory processing quality assessments in various settings with a selected panel of genotypes cultivated in Namulonge – deliverable: field activity report.Perform quality evaluations on samples used in consumer tests, including descriptive sensory analysis – compile, organize, and draft a report that includes findings from consumer tests and participatory processing quality, along with models to validate cooking quality thresholds.Conduct routine quality assessments of sweetpotato harvests – deliverable: cooking quality report on genotypes from recent harvests.IV. Duration
The consultancy will span a total of 131 days.
Qualifications
Selection CriteriaBSc in Food Science.Experience in consumer-driven food product development and food analysis.Proficiency in sensory analysis, experimental design, surveys, data management, data analysis, and report writing.A minimum of 3 years of relevant experience.Experience in conducting field surveys, statistical data analysis, and interpretation, along with strong communication, interpersonal, and leadership skills.Familiarity with potato and sweetpotato value chains is a plus.
