**Job Purpose**:
We seek the services of a Chef to join our catering team to prepare, cook and present food to the highest standards as per the company and MoD standards.
**Responsibilities**:
- Organising and managing shifts as directed by the Head Chef/ Soft Services Manager.
- The preparation, cooking and service of food whilst complying to the food safety act, portion control and presentation standards.
- To have a full knowledge of all areas which have to be covered in the course of your duty.
- To maintain and manage the required high operational and personal standard of hygiene and presentation at all times in compliance with the Food Safety Act.
- Compliance to the Health and Safety Act and COSHH regulations.
- Ensure the correct disposal and storage of all food items as directed by the chef in charge.
- Monitor and record temperatures of fridges and freezers, hot cabinets, serveries as directed by the chef in charge.
- Ensure that assured safe catering principals are followed at all times encompassing legal requirements of the Food Safety Act.
- To ensure that working areas are kept clean and tidy adopting a “clean as you go” policy.
- To ensure that all foods served under your control are served and held at the required temperatures (probed and recorded).
- Ensure that the kitchen area that you are working in is clean and hygienic at all times.
- Ensure that decanting methods are strictly adhered to.
- Ensure that fridge discipline is strictly adhered to.
- Ensure accurate records are maintained as directed by the chef in charge.
- Ensure that the handing over procedures and opening up /closing down procedures are complied to, with emphasis on safety and security.
**Knowledge Skills & Experience**:
- To continue to develop ones own skills / knowledge within the position.
- Ability to work unsupervised.
- To deputise for the Head Chef in their absence.
- Reporting of defects to the Head Chef.
- When required check all incoming purchases as ordered, for quantity and quality.
- Must have experience of working in a busy kitchen environment.
**Person**:
- Good standard of education.
- Experience of working in a kitchen and cooking for over 250 persons
- Certificate in food preparation and cooking.
- Food Safety training.
- COSHH and manual handling awareness training.
- Energy, Enthusiasm and a passion for cooking.
- A flexible approach to work.
- The ability to carry out tasks quickly and competently.
- A strong interest in food.
- The ability to follow instructions.
- Good spoken communication skills.
- The ability to use your initiative and work in a team.
- Prepared to work un-social hours.
Mitie will pay a salary, monthly **site allowance and a bonus at the 13**th** and 27**th** month**. Hours of work are 47.5 per week. The contract duration is **27 months unaccompanied** **with 74 days leave** excluding weekends. Air/sea transport for agreed holiday periods will be at Company's expense. Free accommodation, meals at mess and work clothing will be provided. **Tax free status on island**.

- 74 days leave excluding weekends. There will also be an entitlement to the Ascension Island Bank Holidays.
