Job Description

The company is a wine cave located in Hérault, between Béziers and Narbonne, vinifying an average of 130,000hl on over 2,000ha. Their production consists mainly of Pays d'Oc wines for export markets, with around 10% being AOP, primarily in Saint-Chinian. The structure is partly HVE with annual planned transitions.

Your responsibilities:

  • Organize terroir selections in collaboration with the viticulture technician
  • Manage logistical flows in coordination with the director and cellar master
  • Implement and follow Vinification protocols
  • Master various winemaking processes (traditional, flash détente, pressing, filtration, flotation...)
  • Stay updated on Oenotechnical developments and contribute to continuous improvement
  • Ensure traceability (wines/input) and manage product stocks (keeping records)
  • Ensure wine quality through analytical monitoring/tastings
  • Handle blends and transfers after fermentation
  • Manage and oversee preparations for bottling (filtration, stabilization, analysis, tasting...)
  • Establish and keep track of regulatory documentation: HACCP, records, permits, competitions...
  • Implement and enhance cave hygiene and safety procedures
  • Participate in creating blends, customer sampling, and blends
  • Supervise a part of the staff to support you in your tasks

Desired Profile

Winemaker with a minimum of 3 years of experience. You should be hands-on, with experience in winemaking at our scale and significant skills in managing cellar flows. We expect you to be versatile, dynamic, and meticulous.
