Description of the Hotel

Hilton's premium lifestyle hotel brand emphasizes local authenticity and the customer experience. Our hotel is the first Canopy by Hilton in Cannes.

It has 141 rooms including suites and apartments, a bar, two restaurants, a rooftop, an indoor and outdoor pool, fitness, spa and conference and event spaces.

From the 400 m2 rooftop, our Marea restaurant offers a panoramic view of the bay of Cannes, the Lérins islands and the Esterel massif.

Marea is a vibrant celebration of the bounty of the ocean and its products, inspired by the diverse cuisine of the Mediterranean coastal regions. Seasonal, locally sourced seafood forms the basis of a light and contemporary menu, carefully prepared by our Executive Chef Alexander Douglas Burger.

We are looking for our future F&B Rooftop Manager (permanent employment contract) for the Marea

What to expect...

Upon arrival :

  • Manager, motivate and organize your teams in order to optimize the quality and creativity of the restaurant's services, in compliance with the brand's standards, be force of proposition.
  • Participate in the definition and implementation of the Catering strategy in the points of sale (catering, bar).
  • Develop the result and management of the various points of sale, expenses and profitability (challenge your teams).
  • Participate by your good dress to the image of the establishment.
  • Have an exemplary behaviour in line with the values of the institution

Daily :

At the customer level :

  • Manage and track customer feedback and complaints
  • Maintain a strong relationship with customers in order to build loyalty
  • Be a guarantor of the quality of service to the client, ensure his comfort and ensure that the welcome is warm and personalized

At the technical level :

  • Manage and enhance the restaurant
  • Organize and supervise implementations based on activity forecasts and product information
  • Ensure the quality of the presentation of sales materials and verify compliance with pricing
  • Be responsible for maintaining equipment and furniture in good condition, ensuring the reliability of equipment and monitoring technical interventions
  • Coordinate and control the various points of sale catering to ensure quality service to the customer.
  • Ensure that the service is in line with the standards of the institution.

At the team management level :

  • Ensure annual assessment interviews of its managers, set their objectives and ensure the successful completion of annual employee interviews
  • Develop the motivation and commitment of its teams by creating a good working atmosphere
  • Ensure consistency of schedules according to the hotel's activity and periods
  • Facilitate working meetings, information and exchanges with his team
  • Ensure compliance with labour legislation in its points of sale
  • Train and motivate your team on sales arguments and ensure their application
  • Recruit, integrate, facilitate, organize, train, motivate and develop its employees.

At the commercial / sales level :

  • Ensure your team's business behaviour
  • Create "incentive" challenges within your team to motivate them
  • Be strong and advise the client on the various services
  • Promote the different outlets
  • Be attentive and anticipate the customer's request
  • Increase sales from points of sale through additional sales techniques
  • Contribute to customer loyalty through your quality of service

At the management level :

  • Ensure management results in line with hotel objectives
  • Be responsible for compliance with collection, management and control procedures according to internal procedures
  • Adapt the organization of its department and optimize workforce management to improve the "premium cost"
  • Supervise the restaurant's raw material purchases and ensure proper inventory management.
  • Recommend possible corrective measures to improve turnover and control costs.
  • Initiate new projects and ensure their implementation.

In terms of health/safety/environment :

  • Ensure cleanliness of the catering areas and guarantee strict compliance with hygiene rules (HACCP)
  • Be a guarantor of the good condition, operation of equipment and heritage of the various points of sale restoration
  • Develop and follow up on an action plan based on the results of hygiene analysis
  • Apply and enforce hotel safety rules (fire...)
  • Be responsible for the security of property and persons within its scope
