**EN RESUMÉ**:
- En tant que Cost Controller, vous êtes le garant des coûts nourriture et boissons et des analyses et contrôles qui y sont relatives. Vous travaillez en étroite collaboration avec la comptabilité, la direction de la restauration et les Chefs de Cuisine. Vous encadrez deux économes.
**MISSIONS PRINCIPALES**:
- Encadre l’équipe de l’économat (2 employés)
- Est en charge du contrôle des coûts nourriture et boisson dans un souci permanent d’optimisation des résultats
- Travaille dans le respect des standards internes à l’hôtel.
**RESPONSABILITÉS OPÉRATIONNELLES**:
**Finance**:
- Améliore la rentabilité économique de l’entreprise
- Détermine le coût nourriture et boisson
- Produit les rapports de fin de mois sous forme de ratios, menu engineering, potentiels, slow moving, items ainsi que des commentaires d’analyse et fait des recommandations si nécessaires
- Recherche les écarts ou les raisons d’écarts éventuels
- Effectue des contrôles aléatoires dans les zones de production en comparant les portions par rapport aux recettes et fiches techniques, dans les points de vente en comparant les consommations avec le chiffre d’affaires
- Participe à l’élaboration des fiches techniques avec le Chef de cuisine avant la mise en vente de nouveaux articles dans le logiciel Micros
- S’assure de la validité des tarifications clientèles sur les points de vente avec la Direction F&B et la Direction Financière avant la création de nouveaux articles par la comptabilité dans Micros
- S’informe de toutes les transactions (réquisition ou bon de transfert) entre les différents points de vente afin de déterminer la consommation de chaque point de vente
- Met en place un suivi journalier des dépenses engagées, s’assure quotidiennement que les factures, bons de transfert,sont saisis et que le Daily Food Flash est établi et communiqué et différents services concernés
- Connait toutes les opérations et standards de la restauration, tous les menus et cartes des restaurants, room-service et banquets et sait parfaitement calculer et analyser leurs prix de revient.
- Contrôle et produit les statistiques des repas servis au restaurant du personnel
- Connait parfaitement le logiciel de stock (ADACO)
- Contrôle la création es fournisseurs, des produits, (descente depuis la centrale d’achats) et mise à jour des champs propres à l’hôtel
- Dispense, si nécessaire, des formations du logiciel de stock concernant les commandes, création de Templates et utilisation aux responsables des services.
- Vérifie les différents rapports du logiciel de stock ADACO (variance, livraison non fermées)
- Communique régulièrement avec le Directeur Financier et le Directeur Général.
**Réception des marchandises / approvisionnement**:
- Encadre et guide les économes pour le contrôle des livraisons : au niveau de la qualité, quantité, poids et prix
- S’assure que toute sortie de l’économat est justifiée par un bon de réquisition
- Vérifie et saisit les retours de marchandises
- Est en charge des commandes de réapprovisionnement des stocks
- Fait le suivi des avoirs en attente de régularisation et des réclamations
**Stock**:
- Optimise la gestion des stocks en fonction de l’activité de l’hôtel et contrôle la mise en place des stocks minimum de sécurité (par stock)
- Déclenche les opérations d’inventaires et de contrôle selon la procédure en vigueur et le calendrier/fréquence établis
- Valorise les inventaires et assure la réconciliation des comptes nourriture et boisson
- Comptabiliser les coûts nourriture et boissons dans le système comptable
- S’assure que les marchandises soient stockées et conservées dans les meilleures conditions HACCP et vérifie les DLC
- Maintien ses supérieurs hiérarchiques régulièrement informés des résultats des inventaires, contrôles et analyses effectués ainsi que des éventuels problèmes rencontrés. Veille à communiquer également les dysfonctionnements constatés au Directeur de la Restauration et au Chef des cuisines.
**RESPONSABILITÉS COMPLÉMENTAIRES**:
- Suit les programmes de formation internes et externes de l’hôtel
- Respecte les programmes relatifs à l’hygiène conformément aux procédures de la Compagnie et la législation locale
- Respecte et applique les programmes préventifs visant à éviter les accidents du travail
- Favorise toute économie
**PROFIL RECHERCHÉ**:
- Expérience antérieure des achats dans un hôtel, de préférence
- Connaissance de la norme HACCP
- Expérience pratique des logiciels d'achat et compétences informatiques requises.
