In recent years, interest in using natural substances from plants as a source of antioxidants and functional ingredients in foods has increased. There is therefore a demand for new ingredients or additives of natural origin and having technological and biological properties of interest. In this context, given its rich content of bioactive compounds, dandelion can be a valuable source of ingredients. Dandelion contains a large number of phytochemicals with biological activities, especially polyphenols. Among these polyphenols, dandelion is particularly rich in flavonoids. Numerous studies have demonstrated that dandelion flavonoids have excellent hypolipidemic and anti-hyperglycemic properties.

The main challenge of new ways of valorizing biomass is to develop non-polluting extraction processes that guarantee high purity, high biological activity of extracts, without degradation of bioactive components and at a low energy cost. In this context, this thesis project focuses on the extraction and valorization of dandelion polyphenols. The scientific and technological objectives of this thesis are: (1) the study of the stages of maturity of the dandelion plant on the molecular diversity of the different organs of the plant; (2) The design of a clean, safe and economical process scheme for the selective recovery of polyphenols; (3) The study of the effect of the food matrix on the bioaccessibility of polyphenols during digestion; (4) The evaluation of the quality of polyphenol-enriched food products as a function of the extraction processes applied.

- Université de Technologie de Compiègne- The activity of the Agro-Industrial Technologies (TAI) team of the TIMR laboratory is devoted to mastering the processes of extraction/purification and conservation of agro-resources and, in particular, to the implementation of new and non-conventional processes. Experimentation and modeling of transfer phenomena are inseparable tools used to achieve this objective. The TAI team is internationally recognized for the integration of pulsed power technologies into conventional extractive processes.**Enzyme and Cell Engineering Laboratory**

The research activities of the GEC laboratory mainly concern the development of approaches combining the optimization of the use of bioresources and the creation of bioinspired materials dedicated to molecular recognition. The GEC laboratory has specific technical platforms, including the food science platform and the mass spectrometry platform. The GEC team has expertise in the study of bioactive compounds as a source of new products that can be alternatives to synthetic molecules. The knowledge acquired on the biological activities of natural compounds and nutritional biochemistry is applied to the development of new functional food products.
