Job Summary

As a key member of the culinary team at Marriott International, the Culinary Team Lead is responsible for assisting the Sous Chef in ensuring the quality, consistency, and production of kitchen areas. This role requires a strong culinary background, excellent leadership skills, and the ability to work effectively in a fast-paced environment.

Key Responsibilities

  • Supervise the preparation and production of all hot and cold food items to ensure compliance with recipes and specifications.
  • Manage kitchen shift operations and ensure adherence to Food & Beverage policies, standards, and procedures.
  • Maintain food preparation, handling, and storage standards.
  • Recognize and promote superior quality products, presentations, and flavors.
  • Plan and manage food quantities and plating requirements for the food operation.
  • Communicate production needs to key personnel.
  • Assist in developing daily and seasonal menu items.
  • Ensure compliance with all applicable laws and regulations.
  • Assist in estimating daily restaurant production needs.
  • Prepare and cook foods of all types.

Leadership and Teamwork

The Culinary Team Lead will supervise and coordinate the activities of cooks and workers engaged in food preparation. This role requires excellent interpersonal and communication skills to lead, influence, and encourage others. The successful candidate will be able to promote a positive and productive work environment, ensuring high levels of guest satisfaction and employee engagement.

Requirements

  • High school diploma or equivalent required; 4 years of experience in the culinary, food and beverage, or related professional area.
  • 2-year degree from an accredited university in Culinary Arts, Hotel and Restaurant Management, or related major; 2 years of experience in the culinary, food and beverage, or related professional area.
