Kitchen Operations Manager

As a talented Chef de Partie, you will play a pivotal role in the efficient and profitable functioning of the Novotel Kolkata Hotel & Residences kitchen. Your responsibilities will include ensuring the application of Novotel standards in food production and maintaining the cleanliness of the kitchen and equipment.
Key Responsibilities- Ensure the efficient and profitable functioning of the assigned kitchen.
- Apply Novotel standards in the production of food and maintain kitchen and equipment cleanliness.
- Maintain hygiene standards in accordance with set standards.
- Support the Executive Chef, Executive Sous Chef, and Chef de Cuisine in all kitchen operations phases.
- Ensure HACCP procedures are followed and records are kept at all times.
- Report any matter affecting Novotel Kolkata Hotel & Residences interests to management.
- Prepare dishes according to recipes and quantities.
- Ensure the section is clean and tidy at all times.
- Closely communicate with Restaurant Manager and Assistant Manager on special functions, bookings, menu item availability, service problems, guest comments, and preferences.
- Prevent the use of contaminated products in food preparation.
- Monitor food presentation to ensure company standards and guidelines are met.
- Provide training and guidance to Commis chefs.
- Ensure optimal stock conditions and communicate anticipated shortages to the Executive Sous Chef or Executive Chef.
- Attend to day-to-day equipment and food supply problems.
- Coordinate operations with Department Associates, Team Leaders, and Departmental Managers to ensure operational readiness, efficiency, and prompt service delivery.
- Monitor food quantity and quality to ensure compliance with standards.
- Follow recipes, methods, and instructions from the Executive Chef/Executive Sous Chef.
- Perform additional responsibilities as delegated by management.
