Your Role:

As Head Chef in our Central Kitchen, you will oversee the production of meals for various entities within Suresnes, including schools, nurseries, and a municipal restaurant. You will manage a team of culinary professionals and ensure adherence to safety, hygiene, quality, cost, deadline, and quantity standards.

Key Responsibilities:

  • Daily Production Management: Organize and coordinate hot and cold food production for schools, nurseries, and the municipal restaurant. Develop and update technical sheets, ensure compliance with weights and normalization, test new products and recipes, and supervise the conformity of processes and incoming/outgoing products.
  • Team Leadership: Direct, animate, and coordinate all kitchen sectors (reception, production, delivery, and municipal restaurant). Manage attendance schedules, participate in training plan development, optimize team potential, identify problems, and implement solutions. Participate in the recruitment of staff across different sectors.
  • Collaboration & Compliance: Monitor raw material supply with the buyer, verify budget compliance when entering menu plans, ensure periodic monitoring of equipment status, and collaborate with the quality manager to ensure adherence to current legislation. Actively participate in defining service objectives and management meetings.
  • Hygiene & Safety Standards: Ensure compliance with cleaning schedules and protocols, and implement HACCP and PMS processes in collaboration with sector managers.

Profile:

We seek a skilled culinary professional with knowledge of cooking techniques and tools. Familiarity with HACCP and PMS standards, technical regulations, and municipal catering service operations is essential. You must apply and enforce hygiene and safety rules, master office software (Word, Excel, PowerPoint), and business software (merge). Your diligence, ability to seek information, proactive nature, creativity, strong interpersonal skills, and team spirit will be valuable assets in this role.
