Expérience de 3 ans minimum en tant que contrôleur de coûts en restauration de grand volume obligatoire
Rattaché(e) au Directeur Financier votre rôle sera de définir et mettre en place le contrôle de gestion en liaison avec la Direction générale. Vous garantirez la réalisation des objectifs qualitatifs, quantitatifs, organisationnels et financiers en matière d'achats de produits et de services.
VOS PRINCIPALES MISSIONS:
Encadrer l’équipe de l’économat et de la réception de marchandises ;
Contrôle des ratios Food & Beverage costs ;
Garantir la bonne gestion des stocks (contrôle, rotation, DLC) ;
Élaborer des fiches techniques avec la cuisine ;
Analyser les ventes et attribution des produits vendus dans chaque point de vente ;
Assurer la communication et le lien avec l'ensemble des services et notamment la cuisine et la restauration ;
Mettre en place des indicateurs de suivi de la performance, aussi bien quantitatifs que qualitatifs ainsi que de contrôle des coûts ;
Suivre en permanence les coûts et le budget achats ;
Assurer un reporting auprès de la Direction ;
Mettre en place des procédures, des méthodologies et des outils permettant d'améliorer la performance générale du département Achats / Économat.
Profil recherché
Diplômé(e) d’une école de commerce ou en gestion/management/hôtellerie, vous justifiez d'une expérience confirmée de 3 ans minimum sur un poste similaire dans l’hôtellerie 4*
