As a Senior Sushi Chef at Zuma, you’ll play a key role in creating our signature dishes, combining tradition with modern flair. Zuma is a contemporary Japanese restaurant collection, inspired by the dynamic Izakaya dining style. This role will be based in Zuma Cannes, in the historic Palm Beach. Our luxurious year-round venue plays host to guests attending the many iconic events through-out the year. With a stunning terrace and a multi-format indoor dinning, Zuma Cannes is the go-to location within the South of France. Zuma is proud to be part of the Azumi restaurant collection.

**Main Duties**
Your key responsibilities will include:

- Lead the sushi team by delegating duties effectively, ensuring operational standards, safety, and consistency are upheld
- Oversee food preparation processes, minimizing waste and maintaining control of stock through regular inventory checks and planning
- Ensure the sushi area and all sections of the kitchen are ready for service, demonstrating versatility and leadership across the kitchen
- Estimate food needs accurately and plan orders for perishables and equipment, optimizing resources and minimizing excess
- Maintain high standards for equipment use and handling, reducing breakages and ensuring compliance with food safety regulations
- Support the growth of the sushi team through training, regular performance reviews, and structured onboarding for new members. Provide constructive feedback and updates to the Head Sushi Chef
