Pullman & Mercure Brisbane King George Square is a large vibrant 438 room twin towered hotel which acts as a sanctuary for leisure and business travellers as well as a place to be with our external facing Venues. Located opposite King George Square, City Hall and ideally situated in the heart of Brisbane CBD the hotel has some of the largest conference spaces in Brisbane incorporating 2 ballrooms.
The hotel also features some amazing and extremely popular externally facing venues including Goldfinch Restaurant and Street Café, Sixteen Antlers Rooftop Bar as well as internal facing KG Bar, Expresso Bar and our Executive Lounge.
Reporting to the Portfolio General Manager for Capitaland Hotels, the role will oversee the overall operation of the hotel as well as champion guest and team experience.
You will have full autonym, with the support of Heads of Department, for driving engagement with guests, visitors, colleagues and the community.
Job DescriptionWe are currently seeking an Executive Chef to lead our talented team. In this role, you will report directly to the hotel manager, demonstrating the ability to effectively manage priorities and maintain composure during times of challenge.
Your main responsibilities are:
A passion for people & the ability to create an inspiring team environment Guest centric focus, creating the best experiences for our guest at every opportunity Dedication to the craft of Culinary delivery Understanding of local guest expectations, produce & trends when menu planning Leading & mentoring a team to delivery across the property venues Maintain excellent presentation standards & cost controls for all outlets Maintain & implement programs to ensure high standards of cleanliness and organisation within the kitchen and related outlets Researching, recommend & liaise with Hotel Manager regarding procedures to improve the overall efficiency of the department. Prepare and submit capex proposals as required QualificationsYour skills & experience include:
A trade qualification At least 3 years leading a brigade of chefs Conference & Events experience Experience in leading a team Exceptional communication skills Exceptional organisational skills as well as the ability to multitask.
