Au sein de l’équipe de salle du restaurant Maxim's, le.la manager supervise l’activité de l’ensemble du personnel de la salle dans un souci permanent de satisfaction client. Il.elle participe également, en étroite collaboration avec le chef de cuisine et le directeur d’exploitation, au développement de la rentabilité de l’établissement en fonction des objectifs définis par le directeur d’exploitation.
ACTIVITES
- Être le.la garant.e du service en salle et de la relation client selon les normes du restaurant et ses standards de qualité
- Superviser et assurer la mise en place de la salle conformément aux réservations et aux normes HACCP en vigueur
- Créer une véritable relation client en devenant un(e) véritable conseiller(e) sur la carte et les produits du restaurant
- Accompagner le parcours client et s’assurer de leur bien-être et de la qualité de service en fonctions de la culture de l’établissement
- Répondre aux attentes et interrogations de la clientèle et répondre aux plaintes des clients, le cas échéant
- Être responsable de la facturation et des caisses
- Assurer les ouvertures et fermetures de l’établissement
- Être garant de la gestion des approvisionnements nécessaires pour le service en salle : linge, couverts, décoration, vin, alcool, café
**Manager les équipe de salle**:
- Assurer l’accompagnement des équipes au quotidien ainsi que dans leur montée en compétences
- Être en mesure de remplacer tous les postes de niveau inférieur de l'équipe
- Participer à la supervision et à la coordination de l’activité du personnel de salle, à l’organisation et au contrôle du travail des équipes tout en pouvant intervenir à chaque étape du service
- Être le.la garant.e de l’organisation des plannings de travail du personnel de la salle sous la supervision du directeur d’exploitation ou de son adjoint
- Participer au recrutement des commis de salle et chefs de rang avec l’appui du directeur d’exploitation
- Intégrer les nouveaux collaborateurs, les former et les accompagner dans le développement de leurs compétences
- Accompagner la formation du personnel afin de développer leur expertise
- Identifier en lien avec le directeur d’exploitation et le directeur adjoint d’exploitation les profils évolutifs
- Aider à la fidélisation des membres du personnel de la salle en créant un climat de motivation, de cohésion et de respect
- Être garant.e de la gestion des uniformes des équipes de salle (commandes, distribution aux chefs de rang)
Collaborer avec l’ensemble des fonctions restaurant Maxim's et du groupe Paris Society:
- Être garant.e de la fluidité des relations entre les équipes de cuisine et celles de la salle
- Travailler en étroite collaboration avec le chef de cuisine, la cheffe hôtesse et le directeur d’exploitation
- Assurer la transmission des informations pertinentes aux supérieurs immédiats et au personnel sous sa responsabilité (notamment le plan de tables fourni par la cheffe hôtesse avant chaque service)
- Connaître le calendrier des évènements de son établissement
- Assurer de bonnes relations avec les fournisseurs
- Avoir le sens du service
- Capacité d’organisation & d’adaptation
- Savoir faire preuve de pédagogie (formation des équipes)
- Incarner les valeurs fondamentales du groupe Paris Society
- Pouvoir être accessible et à l'écoute de tous les membres de l'équipe
