Ce poste est basé à l’Institut des sciences et technologies de Lesaffre (LIST) au sein d’une équipe dédiée à la microbiologie appliquée et à l’enzymologie (Centre d’excellence MicroOrganismS).
Le poste a pour objectifs :
La validation et la caractérisation d’enzymes de panification. Le développement et la mise en œuvre de nouveaux dosages enzymatiques.Missions :
En tant que référent(e) des dosages enzymatiques liés aux enzymes de panification, vous êtes responsable du développement et de l’exécution d’essais à faible et moyen débit. Vous assurez la caractérisation des enzymes (purification/cinétique/stabilité…) ainsi que la validation des activités dans des matrices complexes (levain, pain, pâte, améliorants…).
Vous planifiez et réalisez les expériences, vous avez en charge la rédaction des résultats. Vous savez analyser, synthétiser et présenter les résultats à l’équipe de projet (en anglais si nécessaire).
Vous supervisez également le travail de 2 à 3 techniciens pour la validation des enzymes, de la planification des tâches à l’analyse des résultats et à la validation (encadrement transversal).
Votre sens de l’innovation vous permet de suivre les nouvelles technologies et substrats liés à l’évaluation et à la caractérisation d’enzymes. Vous développez de nouveaux dosages enzymatiques et rédigez les protocoles associés.
Qualifications
Compétences techniques:
Vous avez les connaissances théoriques et une expérience significative dans la caractérisation d’enzymes et le développement de dosages enzymatiques. Vous êtes à l’aise avec les analyses statistiques. Vous avez déjà utilisé un LIMS ou un ELN dans un poste précédent. Une expérience préalable sur les protéases est souhaitée, ainsi que l’utilisation d’automates de purification de protéines (de type Äkta, NGC…) ou d’automates d’analyse (de type Gallery…). La connaissance de l’interprétation des résultats de protéomiques est un plus.Compétences comportementales:
Vous faites preuve d’une bonne organisation dans votre travail quotidien, avec de solides compétences analytiques et un esprit critique vis-à-vis des résultats des essais. Vous aimez travailler à la paillasse. Vous êtes un(e) bon(ne) communicante. Vous aimez synthétiser, partager et présenter vos résultats en réunion. Vous êtes à l’aise avec les méthodes de travail transversal et vous avez l’esprit d’équipe.Formation et expérience:
Vous êtes titulaire d’un master en biochimie, enzymologie ou science des aliments, avec 3 à 5 ans d’expérience dans le domaine des enzymes.-
