Job Responsibilities

The primary duties of the Assistant Culinary Manager include:

Overseeing kitchen operations in the absence of the Executive or Head Chef. Assign tasks and responsibilities to kitchen staff to ensure service efficiency. Inspire team members by demonstrating a positive attitude and strong work ethic. Collaborate with the Head Chef in menu development and ensure that necessary supplies are available for anticipated service. Communicate with restaurant staff regarding the availability of menu items, updates to the menu, and any pertinent changes. Uphold high standards of presentation and manage costs across all food and beverage outlets. Implement strict stock rotation practices to minimize waste and maintain inventory control. Coordinate the efforts of cooks and the stewarding team in food preparation and production as needed. Maintain cleanliness and organization in all work areas. Ensure that all kitchen equipment is properly maintained, serviced, and cleaned. Ensure that the highest hygiene standards are upheld by the entire Food & Beverage Service team in compliance with Health & Safety regulations and food preparation guidelines.

Additional Key Responsibilities include:

Commitment to sustainability and regulatory compliance. Management of budget and personnel. Daily monitoring of food production, ordering, costs, and quality to ensure financial performance and control. Guarantee the safety and sanitation of all kitchen facilities and equipment.

Qualifications
