Job Description

Context:

We are seeking a highly skilled researcher to contribute to our understanding of yeast metabolism in sourdough and poolish environments. The successful candidate will have a strong background in food science, with a focus on the analysis of flavours and volatile compounds.

Mission:

As part of our team at Lesaffre, you will be responsible for improving our knowledge of the main volatile compounds associated with the aromatic diversity of sourdough and poolish products. Your research will focus on understanding the production and conservation of these compounds during bread-making.

The aim of this project is to develop targeted strategies for the selection of micro-organisms and optimal fermentation conditions to produce specific poolish aromas. You will also investigate the fermentation/breadmaking strategies for better preservation of the aromas of interest.

Research Environment:

You will be based at the Lesaffre Institute of Science & Technology (LIST) and will have the opportunity to collaborate with researchers at ONIRIS – UMR CNRS GEPEA. You will also work closely with our industrial partner, Lesaffre International, in the Lille area, France.

Qualifications

Recommended training: Validated Master 2 level, ideally agri-food engineer or chemical/microbiology engineer with skills in applied statistics.

PhD Candidate's ideal profile

We are looking for a candidate with a strong background in food science, who has experience in the analysis of flavours and volatile compounds. You should have a good understanding of statistical and data processing techniques, particularly applied to biological data. You should also be able to work autonomously and as part of a team, with excellent communication skills.
