Job Title: Culinary Operations Manager

Industry: Collective Catering - Culinary Operations

Job Overview:

  • Oversee, direct, and manage the culinary production facilities within the dining services sector.
  • Serve as the acting director in their absence, including the authority to approve invoices.
  • Facilitate the coordination of menu development across various locations.
  • Ensure accurate inventory management at each facility in partnership with the procurement team.
  • Guarantee adherence to HACCP regulations, sanitation protocols, and quality assurance measures.
  • Compile and submit vacation schedules for managerial approval.
  • Supervise weekly staffing plans and arrange personnel support across different locations.
  • Monitor compliance with contractual agreements established with catering service providers.
  • Ensure the upkeep of professional kitchen equipment and coordinate with maintenance service providers.
  • Establish menu pricing and conduct regular meetings at each dining establishment.
  • Inspire staff towards achieving quality standards and enhancing customer satisfaction.
  • Encourage sustainable practices, sourcing of local ingredients, and ongoing professional development.
  • Revise technical specifications and input menus into specialized software.
  • Lead essential business processes for certification and compliance purposes.

Additional Duties:

  • Manage customer interactions and reservation systems.
  • Conduct site assessments throughout the department.
  • Participate in team meetings and provide support during service operations.
  • Engage with suppliers and industry stakeholders.
  • Guide and mentor interns in their professional development.

Qualifications:

In-depth knowledge of HACCP standards, public procurement processes, management principles, and culinary practices is essential. Proficiency in technical documentation, Aidomenu software, and Microsoft Office is required. Strong customer service abilities and a collaborative approach are necessary. A proactive and innovative mindset, coupled with a respectful demeanor and a talent for proposing effective solutions, is highly valued.
