Job Title: Sous Chef
Job Summary:
The Sous Chef is a key member of the culinary team, responsible for assisting the Executive Chef in the day-to-day operations of the kitchen. This includes supervising kitchen staff, maintaining high standards of food quality and presentation, and ensuring the smooth running of kitchen services.
Key Responsibilities:
- Supervise kitchen staff in the absence of the Executive Chef, delegating duties and responsibilities to ensure service demands are met.
- Lead by example, setting a positive tone for the kitchen team.
- Assist the Executive Chef with menu preparation, ensuring adequate supplies are available for expected service.
- Liaise with restaurant staff regarding menu availability, additions, and changes.
- Maintain excellent presentation standards and cost control for all food and beverage outlets.
- Ensure strict stock rotation and minimum wastage, implementing and maintaining stock control procedures.
- Work with and coordinate the cook and stewarding team in food preparation and production as required.
- Keep working areas clean and tidy, ensuring all equipment is maintained, serviced, and cleaned.
- Ensure the highest possible standard of hygiene is practiced and maintained by the F&B Service team to meet Health & Safety regulations and food preparation guidelines.
Additional Responsibilities:
- Sustainability and compliance.
- Budget and personnel management responsibilities.
- Monitoring food production, ordering, cost, and quality on a daily basis to ensure financial performance and control.
- Ensure proper safety and sanitation of all kitchen facilities and equipment.
Requirements:
- Relevant trade qualifications.
- Over 5 years of experience working as a chef.
- Relevant experience in the hotel industry.
- Knowledge of food safety requirements.
- Relevant culinary trade qualifications.
- A strong understanding of food safety requirements.
- Strong product knowledge of menu items and seasonal ingredients.
- Knowledge of how to operate kitchen equipment safely.
