Job Summary:
This senior leadership role involves overseeing all aspects of Food and Beverage Operations at Fairmont Hotel Standards, ensuring consistent high-quality food products and services for events and outlets.
Key Responsibilities:
- Directs all aspects of Food and Beverage Operations to meet hotel standards
- Manages and directs Food and Beverage Management team, providing support and direction to drive revenue
- Represents The Plaza positively on and off property
- Ensures a consistent high-quality food product and service for all events and outlets
- Works with Food and Beverage management team and colleagues to improve guest satisfaction and maintain operating budgets
- Executes F&B strategy and focuses on meeting or exceeding departmental and hotel goals while maintaining brand integrity
- Understands client expectations related to food quality, presentation, and service delivery, ensuring staff executes to this level to build customer loyalty
- Participates in hiring, development, and retention of a diverse workforce, sustaining a work environment that focuses on fair and equitable treatment and colleague satisfaction
- Implements and manages company programs to ensure compliance with SOPs and LSOPs, including safety and sanitary regulations
- Supports procedures for food portion and waste controls, ordering uniforms and supplies within budget, and reviewing staffing levels to meet guest service, operational needs, and financial objectives
- Interacts with guests, community representatives, vendors, and local education systems as needed, receiving departmental guest complaints and ensuring corrective action is taken
- Trains internal guests in safety procedures and supervises their ability to follow loss prevention policies
- Hires, trains, empowers, coaches, and counsels employees, resolving conflicts through fair treatment policy, and works with 3rd party representatives to create positive relations
Qualifications:
- Previous Food & Beverage experience in a senior leadership role required
- Restaurant experience required
- Comprehends budgets, operating statements, and payroll progress reports to assist in financial management of the department
- Experience in a Forbes 5-star and AAA 5-Diamond hotel or resort required
- Proven record of coordinating multiple departments, exceptional interpersonal and guest relation skills, and proven team-builder with outstanding coaching skills
- Clearly demonstrated ability to be innovative, creative, and think outside the box
- Previous experience working in a union environment
- Computer literate in Microsoft Window applications required
- University/College degree in a related discipline required
- Strong interpersonal and problem-solving abilities, highly responsible and reliable, able to work well under pressure, and cohesively as part of a team
- Ability to focus attention on guest needs, remaining calm and courteous at all times, and legally eligible to work in the United States
