MISSIONS :

Assiste le Chef de Cuisine dans ses missions opérationnelles et le remplace pendant ses absences. S’assure que les mets soient composés et préparés dans un souci d’excellence de qualité, conforme aux exigences du Chef de Cuisine, et dans le respect de la philosophie de ce dernier. Participe activement à la réalisation des objectifs du département de la Restauration. Respecte et fait respecter l’hygiène conformément à la législation en vigueur, et au PMS (plan de maîtrise sanitaire) mis en place dans l’établissement. Propose régulièrement au Chef de cuisine de nouvelles idées, plats, améliorations, en faisant preuve de créativité individuelle et collective. Elabore les fiches techniques de préparation sur le logiciel Adaco, s’assure de la connaissance de ces dernières par ses équipes. Contrôle la consommation de nourriture et les besoins en ingrédients pour honorer les commandes des clients.
