Executive Director of Culinary Operations

Raffles is a brand that seamlessly blends local heritage and luxury. As our Director of Food and Beverage Services, you will oversee the entire food and beverage planning and service process, including menu planning and costs, food and drink preparation and presentation. Your key duties will include maintaining high-quality product and service standards, maximizing profits, forecasting and budgeting, and developing employees. You will also be responsible for planning resort operations and ensuring that guests receive warm and efficient service at all times. Establish personal guest contact and promote feedback. Anticipate guests' needs and requirements.
- Directs and oversees all aspects of the organization's food and beverage planning & service, with duties to include menu planning and costs, preparation & presentation of food and drinks.
- Maintaining product and service quality levels while maximizing profits; forecasting and budgeting, and selecting, evaluating, training, and developing employees.
- Plans Resort operations, ensuring that guests receive warm, friendly and efficient service at all times.
- Establishes personal guest contact and promotes feedback. Proactively anticipates guests' needs and requirements.
- Assure the ordering and purchasing for Food & Beverage and vending. Assure F&B inventories, accurate stock summaries.
- Monitor service and food and beverage standards in all outlets and kitchens ensuring that managers take corrective actions as necessary.
Requirements:
- Previous experience in luxury hotel/resort.
- Strong leadership. Hands on approach, motivate, developing a team and successful planning.
- Strong leadership, interpersonal skills and time management skills.
- Excellent communication and customer contact skills.
- Results and service oriented with an eye for details.
- Ability to multi-task, work well in stressful & high-pressure situations. A team player & builder and a motivator & self-starter.
- Demonstrate experience in creating innovative guest experiences.
- Background/knowledge on Leading Quality Assurance (LQA) is a plus.
