**Job Title:** Executive Chef Assistant

**Job Summary:

We are seeking a highly skilled and experienced Executive Chef Assistant to join our team at Accor. As a key member of our culinary operations, you will be responsible for assisting the Executive Chef in the preparation and presentation of menu items, ensuring strict stock rotation and minimum wastage, and maintaining a clean and organized kitchen environment.

Key Responsibilities:

  • Menu Preparation: Assist in the preparation and presentation of menu items, ensuring variety and flair within cost margins.
  • Stock Management: Implement and maintain strict stock rotation and minimum wastage procedures.
  • Ordering and Inventory: Order necessary foods according to proposed business demands, consulting with the Executive Chef for guidance and authorization.
  • Team Collaboration: Liaise with restaurant employees regarding menu availability, additions, and changes.
  • Apprentice Supervision: Work with and coordinate the work of apprentices in food preparation and production.
  • Mise-en-Place: Prepare and ensure availability of mise-en-place as required.
  • Cleanliness and Maintenance: Maintain all working areas clean and tidy, ensuring all equipment is serviced and cleaned, and reporting any problems to the Executive Chef.
  • Shift Briefings: Attend daily shift briefings to kitchen colleagues.
  • Team Motivation: Promote a fun, professional, and disciplined work environment, supporting and motivating kitchen colleagues.
  • Communication: Actively share ideas, opinions, and suggestions in daily shift briefings.
  • Storeroom Requisitions: Ensure accurate storeroom requisitions to minimize repeat visits.
  • Standards and Expectations: Perform tasks to the standards and expectations set forth.
  • Health and Safety: Promote health and safety at all times, ensuring proper hygiene as per municipality and health and safety requirements.
  • Quality Control: Complete all grooming, spot check, and temperature control sheets as required.
  • Chiller Maintenance: Maintain cleanliness and proper rotation of product in all chillers.
  • Wastage and Spoilage: Minimize wastage and spoilage.
  • Communication: Communicate daily with supervisors to ensure open lines of communication.
  • Task Efficiency: Complete assigned tasks in an efficient and timely manner.
  • Quality Improvement: Strive to improve 'Trustyou' results for food quality.
  • Daily Checks: Perform daily checks of all mise en place to ensure freshness and quality standards.
  • Additional Duties: Perform any other reasonable duties as required by the department head.
  • Support and Liaison: Assist and liaise with the chef on duty as required.

Qualifications:

**Required Qualifications:**

  • Grade 12
  • Diploma in Culinary Arts (an advantage)
