We are seeking a talented and creative Executive Pastry Chef, to be based in Beirut, Lebanon, to lead our pastry kitchen and elevate our culinary offerings. In this role, you will be responsible for overseeing all aspects of pastry production, including menu development, recipe creation, and presentation. You will lead a team of pastry chefs and bakers, inspiring creativity, fostering innovation, and ensuring consistency in quality and taste. The ideal candidate will have a passion for pastry arts, a strong culinary background, and a proven track record of delivering exceptional desserts and baked goods. Key Responsibilities:
- Develop and execute innovative pastry menus, incorporating seasonal ingredients, culinary trends, and guest preferences.
- Lead menu planning and recipe development, ensuring a diverse selection of desserts, pastries, and baked goods that appeal to a wide range of tastes and dietary preferences.
- Manage all aspects of pastry production, including ingredient sourcing, preparation, baking, and plating, while maintaining high standards of quality and presentation.
- Train, mentor, and supervise pastry kitchen staff, providing guidance, feedback, and support to foster skill development and teamwork.
- Establish and enforce food safety and sanitation protocols in compliance with regulatory standards and best practices.
- Collaborate with other culinary departments and food and beverage teams to coordinate menu offerings and ensure seamless execution of culinary operations.
- Monitor inventory levels and control costs by minimizing waste, optimizing portion sizes, and sourcing ingredients efficiently.
- Stay informed about industry trends, new techniques, and emerging ingredients in the field of pastry arts, incorporating innovative ideas into menu concepts and culinary presentations.
- Maintain a clean, organized, and efficient pastry kitchen environment, adhering to hygiene standards and implementing proper equipment maintenance procedures.
- Represent the pastry department in meetings with senior management, event planners, and clients, providing expertise and guidance on pastry-related matters.
Qualifications:
- Culinary degree or equivalent certification from a recognized culinary institute.
- Proven experience as a Pastry Chef or Executive Pastry Chef in a high-volume, upscale dining establishment or luxury hotel.
- Extensive knowledge of pastry techniques, baking principles, and dessert preparation methods, with a demonstrated ability to create visually stunning and delicious desserts.
- Strong leadership and management skills, with the ability to inspire and motivate a team of pastry professionals to achieve excellence.
- Excellent organizational and multitasking abilities, with a keen attention to detail and a commitment to delivering superior culinary experiences.
- Creative flair and passion for culinary arts, with a willingness to experiment with new flavors, textures, and presentations.
- Proficiency in menu costing, budget management, and inventory control, with a focus on maximizing profitability while maintaining quality standards.
- Effective communication skills, with the ability to collaborate with cross-functional teams and interact professionally with colleagues, vendors, and guests.
- Familiarity with food safety regulations and sanitation practices, with a commitment to upholding the highest standards of cleanliness and hygiene in the kitchen.
- Flexibility to work evenings, weekends, and holidays as required in a hospitality environment.
